
Recipe – Potato Cakes

Potato Cakes:
- 2 medium Yukon gold or Red Bliss potatoes (2 cups)
- 1/2 medium onion
- 2 tablespoons fresh parsley
- 2 teaspoons lemon juice
- 1/2 teaspoon Kosher salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cumin
- 1/4 teaspoon garlic powder
- 1 large egg
In a food processor fitted with a steel blade, mince the onion and parsley. Then change blades to a fine shredding blade and process the potatoes. Transfer mixture to a large bowl and add the lemon juice and seasonings and mix well. Then add the egg and mix until combined. Drop the batter gently into a frying pan with ¼” hot vegetable oil and cook until browned on both sides. Drain potato cakes on a paper towel-lined baking sheet.

Yield: 3 -4 5″ pancakes
