Recipe – Lemon Scented Blueberry Pancakes

  • 1 cup all purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch of salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons butte, melted
  • 1 tablespoon grated lemon zest
  • 1/2 cup fresh blueberries

In a medium mixing bowl, whisk the flour, sugar, baking powder, baking soda and salt. In a small mixing bowl, whisk the egg, then melted butter and buttermilk. Add the wet ingredients to the dry ingredients and combine until slightly smooth, yet lumpy. Fold in the lemon zest and allow the batter to sit for a couple of minutes.

Heat a griddle over medium heat, then butter it. Pour 1/4 cup of the batter onto the hot griddle for each pancake and dot with a few blueberries. Cook for about 2 to 3 minutes or until the batter bubbles and is golden brown, then flip the pancake.
