
Recipe – Banana Oatmeal Golden Raisin Bread

Ingredients:
- 1 1/4 cups all purpose flour
- 3/4 cup granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon Kosher salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup old fashioned oats
- 3/4 cup golden raisins
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup plain yogurt or sour cream
- 1 teaspoon vanilla
- 1 cup pureed mashed banana*
* Instead of banana, substitute 1 cup of either shredded carrot or zucchini, or ¼ inch sized dice of apple or pear after it is peeled.
Preheat oven to 350 degrees and butter a loaf pan.
In a large mixing bowl, mix flour, sugar, baking powder, salt, baking soda, cinnamon, and nutmeg; add oats and raisins. In a medium bowl, whisk eggs, oil, yogurt or sour cream, and vanilla; mix in the banana or other 1 cup substitute ingredient. Add the wet ingredients to the dry ingredients and mix until combined without over beating.
Bake for 45-55 minutes until a toothpick inserted in the middle comes out clean.

Yield: 1 loaf – 10 slices
