Cakey Chocolate Chippers
- 2-1/4 cups unbleached all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 14 tablespoons unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups semisweet chocolate chips
Preheat oven to 350 degrees. Line a baking sheet with parchment or a Silpat mat.
In a medium bowl, whisk the flour, baking soda, and salt. In a stand mixer fitted with a paddle attachment, cream the butter and sugars at medium-low speed about 3 minutes. Add the eggs, one at a time, until combined; then add vanilla beating about 20 seconds. Scrape down the bowl and add the flour mixture and mix for 1 minute until combined. Then add chocolate chips and mix about 20 seconds until incorporated.
Drop onto the cookie sheets using the medium scoop and bake at 350 degrees for about 12-14 minutes until lightly browned.
Yield: 3 – 4 dozen cookies
