Banana Pecan Whole Wheat Pancakes

  • 3/4 cup all-purpose flour
  • ¾ cup whole wheat flour
  • 1-1/2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1/4 teaspoon Kosher salt
  • 2 large eggs
  • 1 tablespoon honey
  • 1 teaspoon vanilla
  • 1 cup buttermilk
  • 3/4 cup whole milk
  • ½ cup pecans, chopped
  • 1 banana, sliced

In a large bowl, whisk together the flours, baking powder, baking soda, and salt.  In a medium bowl, beat the egg, honey, and vanilla until combined, then add the buttermilk and milk and stir.  Add the wet ingredients to the dry ingredients and stir until combined, yet lumpy.

Heat the griddle on low to medium heat and butter it.  Drop batter onto hot griddle with ¼ cup measure and sprinkle pecans in the middle and banana slices around the pecans onto each pancake.  When you see air bubbles form, flip the pancakes.
